Has anyone managed to get voip.co.uk working with the Gnome softphone Ekiga?

I've set the soft-phone up with the appropriate settings and can get an
outgoing call to initiate. However, when the call is answered, there is no
transfer of audio. Could this be a codec thing?

If it's SIP you're talking about, then it's unlikely. Usually calls just
drop when suitable codecs can't be found. It's much more likely to be an
issue with the right ports not being forwarded. 'lsof -i' will tell you
what ports Ekiga is using.
